Recipe of the Week!
Have you ever made one of these? I get these hankerings for cake. Usually at about 8 ‘clock at night when there is no cake and no real possibility of me making a cake. Until I discovered the Mug Cake. And to make matters even more convenient, the Pawley’s Studio Kid Ewe Knot Yarn-y sayings mugs are PERFECT for mug cakes. Otherwise, you need a large mug, about 16-20 ounces.
So, here is my version of a mug cake. It is the easy way, because I don’t like things to be hard and at 8 pm, well, quick is the ticket. You certainly can tweak it to make it more baked-cake-like, but that requires more effort.
Chocolate Brownie Mug Cake
1/4 cup Self-Rising Flour
1/4 cup Sugar
3 Tablespoons Cocoa powder
1 egg, lightly beaten
3 Tablespoons milk
2 Tablespoons oil (try an orange infused Olive oil!)
1/2 teaspoon vanilla extract
3 Tablespoons Chocolate Chips (Hershey’s Special Dark – yum)
Mix the flour, sugar and cocoa in your “Yarn Snob” mug. Combine the wet ingredients in a liquid measuring cup. Mix the wet into the dry until thoroughly combined. Mix in chocolate chips.
Microwave on High for 1 minute. Check cake, continue in 15 second increments until the top is just dry. It takes
my microwave just shy of 2 minutes. Let the cake cool a little before digging in.
I know it is hard to wait. Just 2 minutes or so.
Super easy to modify this. Add a pinch of cinnamon, try butterscotch chips, flavored oil, crushed peppermint; whatever is in the pantry! Enjoy.
